It’s no secret that I love Pinterest. I use it to keep track of ideas for our someday house, our soon-to-be wedding, my fashion ideas and the many crafts I want to try. But the best use I’ve found for Pinterest so far is recipes. I’ve found some real gems there!
My friend Nanette challenged herself and us to get Pinteractive. Never one to back down from a challenge, I joined her. Besides, I heartily agree it is time to start making those pins a reality in my life.
One of the many, many reasons I am looking forward to having a house is the fact that I will finally have a big kitchen and room to host dinner parties where people can sit around a table and eat (unlike our current situation where guests must eat food while holding a plate on their lap).
We hosted my family over for dinner the other night. I love family dinners not just because it’s a good time together but because I get to try out new recipes. The meal was so good that I am sharing the recipes here.
Crock pot mashed potatoes: I saw this recipe on Pinterest and they proclaimed them to be The Best Mashed Potatoes Ever. I was skeptical – I mean how different can they be? They’re still potatoes, mashed. But you guys? These are good. SO GOOD. So if you’re making dinner and have 4-5 hours to wait for mashed potatoes, make these. They were, hands down, the best mashed potatoes I’ve ever had.
Buttermilk Roast Chicken: Again, I found this recipe thanks to Pinterest. It’s a Smitten Kitchen recipe which ensures it’s going to be delicious. I’ve never made one of her recipes and not been ridiculously happy with the results. The actual cooking time is minimal but brining the chicken in the mixture is best when done 24 hours in advance. The chicken was so moist. Even my nephew loved it.
Chocolate Chip Buttermilk Scones: Because I had extra buttermilk left over from the brining mixture, I found a recipe for buttermilk scones. The buttermilk I purchased was low fat and these were made with whole wheat and white flours. By their very nature- being a carb/chocolate food- they aren’t great for watching your calorie intake but they were tasty. Mr. Darcy ate the majority of them. I preferred them hot and melty with a cup of tea and then the next day I was just sort of over them.
